Do you remember coming home from school and smelling a delicious dinner stewing in the crock pot? I do. Little did I know that delicious meal only took, at the most, 15 minutes to prepare. My mom was busy with school and work, so she did not have a lot of time to prepare meals. Lucky for me, we had a crock pot. She would do all of the grocery shopping on the weekend and we would use the crock pot two or three times a week. The main ingredients were chicken and some type of bean. When I make fried chicken with a conventional burner I have to keep adjusting the dial setting because as you add more pieces the temperature of the oil drops and the chicken starts to absorb oil. The built-in temperature sensor eliminates the need to do this. I can add piece after piece and I know I'm not going to have oil drenched chicken when I serve it. This sensor also makes it possible to use my cast iron dutch oven as a Slow Cooker by keeping a constant low temperature.

You absolutely need good tasting salt free seasonings. You will find that salt free seasonings are not all created equal. Find a good tasting salt substitute. Preferably a no potassium chloride salt substitute. Buy fresh fruits and vegetables or frozen with no salt added. For you to stay on a low sodium diet you will be cooking almost everything from scratch. No canned soups, no mixes, no microwave dinners, no prepared foods. A low sodium diet is back to basics cooking. Old fashioned, old world style cooking doesn't have to take a lot of work. Just takes some planning, good seasonings, good ingredients and Slow Cooking, makes all the difference for a flavorful low sodium diet.
